Nov. 02--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of Oct. 21-27.

-Bags of chips chewed through by mice were observed in the facility. Go through all food on the shelves and discard any damaged product.

-The person in charge did not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The person in charge must know and enforce food safety in the facility.

-The can opener blade, the sugar scoop and the utensils used to mix the pink lemonade were dirty. Clean and sanitize these items

-Dirty utensils were being stored in the hand sink. The hand sink must be kept clear and used only for hand washing.

-Rice and beans held at 54°F, in the cold hold unit, rather than 41°F or below as required. Food was discarded.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

-Chef knife, a food contact surface, was observed to have food residue and was not clean to sight and touch. Knives are being used continuously for the day and not being washed, rinsed, and sanitized every four hours. Utensils must be washed, rinsed and sanitized every four hours when in continuous use.

-The handwash sink and hot water heater was not plugged in at time of inspection. Hot water was not available on demand during inspection. Hot running water must be available at all times for handwashing.

-Observed in the reach in refrigerator that the several different containers of milk were being offered for sale out of date. These were removed and discarded before end of inspection by the manager.

-Observed that the hand washing sink in the bathroom had a paper towel dispenser that was on the floor. The manager reported that it was pulled off of the wall. Before the end of the inspection paper towels were placed at this location for use until other unit is mounted back to the wall.
