Oct. 26--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of October 14-20.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-An individual was observed eating in the kitchen. There may be no eating in food preparation areas. A employee's bottled beverage was observed by the hand sink. Drinking in food preparation areas may only be done from lidded containers through a straw.

-The paper towel dispenser at the hand sink at the front service counter was empty. Fill the paper towel dispenser at this location.

-Food Employee observed eating or tasting food in the dish room area. Food employees must consume food in a designated area, away from food preparation and dish cleaning areas.

-Food Employee did not follow proper handwashing procedure. Food employee did not wash hands for adequate amount of time, at least 20 seconds. Hand washing must occur for an appropriate amount of time, as previously mentioned, for hands to be properly cleaned.

-Food Employee did not follow proper handwashing procedure. Soap and/or warm water not used. Soap and warm water must be used for proper hand washing to occur.

-Food Employee observed using a dish towel to dry hands after washing them. Single use paper towel is to be used for hand drying at hand wash sinks.

-Soap was not available at the handwash sink in the employee bathroom. Hand wash stations must be supplied with soap at all times.

-Shell eggs, salsa, & pancake batter were being held in ice wells with temperatures of 48, 44, & 44, respectively. Cold held food must be maintained at a temperature of 41F or below. Corrective action was possible, monitor temperatures in ice wells to ensure proper cold holding is occurring.

-The deli slicer blade, a food contact surface, was observed to have food residue and was not clean to sight and touch. Clean and sanitize this unit when finished with use.

-Observed containers of salad dressing that had a visible accumulation of mold on them. Rotate stock regularly to ensure integrity of product. Dressing was discarded.

-A food employee was observed placing bacon in a to go container with a gloved hand that had previously handled raw egg. Do not handle ready to eat food with contaminated hands.
