July 13--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of July 1 to July 7.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Cigarettes were found on the shelf with food product in the dry storage area during the inspection. Cigarettes must be stored separately from food storage areas. Relocate this item to a separate area of the facility, away from any food product.

-Observed cabbage stored directly on the floor in the food prep area, rather than 6 inches off of the floor as required. All food must be stored at least six inches off the floor. Relocate this item.

-Both side of cold line had product temperatures (diced tomato, shredded lettuce, grated cheese) with internal temperatures ranging from 48.8*F-52.3*F All temperatures monitored with stem thermometer in ice water bath at 32.3*F in presence of management.

-The cold holding drawers underneath the flat top grill exhibited an ambient temperature of 55F, with product inside the unit such as beef exhibiting a temp of 54F. Product was discarded. Do not use this unit until it can maintain a temperature of 41F or below.

-The lowboy refrigerator below the wood counter top exhibited an ambient temperature of 48F, with product inside the unit such as chicken salad and cut tomatoes exhibiting temperatures of 47F for both. Corrective action was possible. Product was moved to the walk in cooler. Do not use this unit until it can maintain a temperature of 41F or below.

-Food Employee observed donning single use gloves without a prior hand wash. Hands must be washed prior to putting on gloves.

-Mold was observed on the inside of the ice machine. Discard the ice and clean and sanitize the inside of the ice machine.

-Observed that the hand wash sink in the kitchen did not have soap and paper towels available for employee use. Restock the sink with soap and paper towels.

-Food that was being stored in the reach in refrigerator that was closest to the entry area of the kitchen, was holding food at 45 degrees F in place of 41 degrees F or lower. The food was ordered transferred to another reach in refrigerator in the kitchen that was holding proper temperature. Unit is to be serviced to assure 41 degrees or lower is being maintained. Owner stated a large batch of prepared food was recently placed in the unit.

-In the walk in refrigerator, raw beef was being stored ready to eat vegetables. The beef is to be placed on the lowest shelf, with no ready to eat foods beneath it.

-Shellfish, milk, eggs held at 51 °F, in the walk in refrigerator, rather than 45°F or below as required. While at site it was determined that milk was recently delivered, All milk and eggs were then transferred into two refrigerated units that were holding temperature below 40 degrees F. walk in cooler is to be repaired so temperature is 41 degrees or below.

-The hand washing sink in the bathroom did not have paper towels present for proper hand washing. Paper towels were placed in the bathroom before the end of the inspection.

-Food was held between 51-60°F, in the dairy case and cases in dairy area, rather than 41°F or below as required. A large amount of food above 41°F was discarded. Documentation of temperature monitoring was not readily available.

-Meat in the hot hold area stored open with no covering. Cover all foods.
